Tomato Sauce

It is a sweet and sour piquant garlic flavoured sauce used mainly as an accompaniments of Italian food.

Making Tomato Sauce

  Ingredients Quantity

1 Tomato chopped concasse 500 Gms
2 Tomato Puree 100 Gms
3 Brown Stock 500 Ml
4 Flour 60 Gms
5 Butter 60 Gms
6 Bacom Trimmings 40 Gms
7 Mire Poix Vegetables 60 Gms
8 Bouquet Garni 15 Gms
9 Chopped Garlic` 100 Gms
10 Salt,Pepper,Sugar To taste

Method Of Preparation

1 Melt the butter in a pan
2 Add roughly chopped vegetable and chopped garlic and saute it till slightly brown.
3 Mix the flour and fry till it get a sandy texture and brown in color.
4 Add tomato puree and chopped tomato concasse and stir it.
5 Add the stock,stir it to prevent from lumps formations.
6 Correct the seasoning and cook for 1-2 hours.
7 Skim frequently and strain
