Stock is a soluble extract from the bones of mutton, fish, poultry veal, beef or game in water with different aromatic vegetables i.e. morepoix,bouquet garni,etc.It is a nutritious, strongly flavoured liquid.It is important foundation liquid that is used in the preparation of various dishes such as sauces,gravies,curries,etc.Nutrients are extracted by prolonged and gentle simmering of bones.

There are basically two types of stock white fish stock is the third one.They are:
