Stock

Stock is a soluble extract from the bones of mutton, fish, poultry veal, beef or game in water with different aromatic vegetables i.e. morepoix,bouquet garni,etc.It is a nutritious, strongly flavoured liquid.It is important foundation liquid that is used in the preparation of various dishes such as sauces,gravies,curries,etc.Nutrients are extracted by prolonged and gentle simmering of bones.

Types of stock

There are basically two types of stock white fish stock is the third one.They are:


A. White Stock                                          B. Brown Stock

i.White Beef Stock                              i. Brown Beef Stock
ii. White Mutton Stock                        ii. Brown Mutton Stock
iii. White Veal Stock                            iii. Brown Veal Stock
iv. White Chicken Stock                  iv. Brown Game/Chicken Stock
