Mayonnaise Sauce



Mayonnaise Sauce is a rich,thick,creamy cold sauce with mixture or emulsion of salad oil,egg yolk,vinegar and seasonings.

Making Mayonnaise Sauce
   Ingredients Quantity
1 Egg yolk 7 no.
2 Mustard powder 1 Tbs
3 Vinegar/Lemon juice 25 ml
4 Olive oil/salad oil 1 liter
5 Salt and Pepper To taste
6 Sugar 15 gms

Method of Preparation
1  Place the egg yolk in a clean bowl.
2  Add mustard powder and sugar and whisk properly.
3  Pour the oil little at a time over the mixture slowly.
4  Whisk gradually until all oil gets in corporated
5  If the mixture become tight to whisk ,add little vinegar at a time.
6  When the mixture become light and creamy,check for seasoning.
7  Place in a clean air tight container and refrigerate.
