Making Brown Stock (1 Litre)




      Ingredients                                                Quantity

1 Bones (Mutton,Beef,Chicken,Veal)                  1.5 Kg
2 Mire poix
   Turnip                                                                 100 Gms
   Onion                                                                  100 Gms
   Carrot                                                                  100 Gms
   Celery                                                                 100 Gms
3 Bouquet Garni
    Pepper corn                                                      15 Gms
    Thyme                                                               1/2 Spring
    Bay Leaf                                                           1-2 Leaf
4 Water                                                                 1.5Liters
5 Fat/Oil                                                                100 Ml

Method of preparation

1 Cut the bones wash it and roast till brown in color
2 Fry the mire poix till brown in color in a separate pan.
3 Mix the brown bones and mire poix together,add bouquet garni and water.
4 Simmer for 4-6 hours,skimming from time to time.
5 Strain the stock,reboil and used as required.
