Hollandise Sauce is a warm yellow rich sauce.It contains a high percentage of fat and egg yolk.It is served over grilled or baked fish.vegetables,etc.
Making Hollandise Sauce
Ingredients Quantity
1 Butter 500 gm
2 Egg yolk 4 no.
3 Vinegar/Lemon juice 30 ml
4 Crushed Pepper Corn 8 no.
5 Salt to taste
Method of Preparation
1 Melt the butter in a pan and set a side.
2 Heat the pan and add crushed pepper corn and vinegar and reduced over slow heat.
3 Mix the egg yolk and whisk briskly.
4 Place the bowl in a double boiler and whisk the egg yolk.
5 Now add melted butter gradually and whisk till it blend well and forms a smooth consistency.
6 Correct the seasoning and store in a cool place.
